I'm having an at home spa day with my bridesmaids before my wedding. What should we have for snacks?

Bite sized foods and dips might be best. A lot depends on if you want it upscale or a simple kicked back girls party. Upscale: stuffed mushrooms, crudite with different dips ( onion dip, hummus, spinach and artichoke, ect.), chicken satay skewers,petit four sandwich stacks, crab rangoon wontons, baby quiche, baked brie, stuffed endive leaves... Kicked back: pigs in blankets, chips and dip, nachos, chex mix, pizza rolls, mini egg rolls, deviled eggs, fried ravioli, mozzarella sticks... I'm having an at home spa day with my bridesmaids before my wedding. What should we have for snacks?
In a spa in California I had the best finger food. They served tiny sandwiches, mini-quiches, little zucchini pancakes with salmon, sour cream and dill on top. Mini-crepes with either strawberries and whipped cream or chocolate cream filling for dessert. They served everything with mineral water and little cups of green tea. FRUITED CHICKEN SALAD





2 quarts coarsely cut cooked chicken, approximately 4-6 pounds


1 pound fresh seedless green or red grapes


2 cups finely chopped celery


4 green onions, finely chopped, tops included


3 cups toasted slivered almonds, divided


3 cups mayonnaise


***For a lighter version substitute Plain Yogurt for mayo


2 tablespoons lemon juice


1 tablespoon curry powder


1 (20 ounce) can pineapple chunks or tidbits





Cut cooked chicken into bite-size pieces. Wash grapes and dry on paper towel; cut each grape into quarters. Put the cut chicken pieces into a large mixing bowl and add to it the celery, quartered grapes, onion, and 2 cups toasted almonds. Mix well.


In another bowl, blend mayonnaise (or yogurt) with lemon juice and curry powder.


Combine mayonnaise mixture with chicken mixture, adding some pineapple juice to make the salad the consistence you prefer.


Chill for several hours in a large glass or stainless steel bowl.


Place a generous serving on a crisp lettuce leaf, sprinkle each mound with remaining almonds and garnish with pineapple chunks.


***If you prefer, the pineapple chunks can be folded into the salad mixture.


Makes 12 servings

MANDARIN ORANGE SALAD





1/4 cup almonds, sliced


1 T. plus 1 tsp. Sugar


陆 head iceberg lettuce


陆 head romaine lettuce


1 cup celery, chopped


3 green onions, thinly sliced


1 (11 oz.) can mandarin oranges, drained





Dressing:


录 cup vegetable oil


2 T. vinegar


2 T. sugar


1 T. parsley, snipped


陆 tsp. Salt


Dash pepper


Dash hot pepper sauce (Tabasco)





*Tear lettuce into bite size pieces. Place greens in large plastic bag, add celery and green onions. Fasten bag and refrigerate.


*Combine well in a jar: oil, vinegar, sugar, parsley, salt, pepper and Tabasco. Refrigerate at least one hour.


*Cook and stir almonds and sugar over low heat until sugar is melted and nuts are coated. Cool on wax paper and break apart.


*Pour dressing into greens bag 5 minutes before serving. Add oranges. *Shake bag. Add almonds and serve.


*Serves 4-6

COOL ';VEGGIE'; PIZZA


1 can refrigerator crescent rolls


2 (8 oz.) pkgs. cream cheese


1 1/2 tbsp. mayonnaise


Dill weed


Finely chopped ';veggies'; (zucchini, mushrooms, green peppers, green onions,


tomatoes, cucumbers)


Spread crescent roll dough on pizza sheet or cookie sheet. Bake at 350 degrees until lightly brown. Remove from oven and let cool completely. Blend together softened cream cheese, mayonnaise, and dill weed. Spread the cheese mixture on top of cold crust.


Sprinkle a layer of each vegetable over cheese layer. Chill before serving. To serve, cut pizza into wedges or squares with a pizza cutter.






First of all Congratulations! I think some nice tea sandwiches would be good. Like cucumber and cream cheese on crust-less bread. Another thing is Chocolate fondue for fruit. Maybe some veggies w/ a dip of some sort. Different assortment of cookies.
